What is Aligue? Well it is in short crab fat, which is a very delicious food but is high in cholesterol. It is the orange-red material found inside crab's shell. Commonly it can be found in local crab species known as "Talangka."
Another great dish to try is their Truffled Bone Marrow but if you are trying this one do not mix it with Balut Aligue since the cholesterol level of the two combine is really very high. Bone Marrow is actually healthy and provides the needed calcium for your body.
